Captain Jon and Sailor work well together and were awesome with our 4 teenage kids!! We caught enough fish to take to Harry T’s for dinner and had a blast catching (and releasing) Amber Jacks! We had a foreign exchange student with us from Spain that had never fished and Sailor was super patient and helpful with her

Had a lot of fun catching a lot of fish! Had more fun trolling than bottom fishing. The Bonita was delicious!!! as long as you trim the bloodier darker purple meat off it tastes amazing! I seasoned it with Salt, Pepper and Harry T’s seasoning located right next to where the boat is docked. I cut it into small squares and seared quickly on side. Maybe 20-30 seconds so the inside is slightly raw. Then added to taco with Pico de gallo and avocado. Honestly chefs kiss!!!

Trip - Kids Fishing Charter for Beginners Destin on August 20, 2025

I took my kids out for our first ever fishing charter and we had a blast. The crew was amazing very friendly and helpful. They were even sympathetic to my daughter’s friend who was sick 5 hours out of the 6 hours we were out. We caught a good bit of fish and even a couple bigger ones. Rarely had a moment when we were not catching anything. I would definitely recommend going out on starfire with captain Bill West.

Captain Bill and First Mate John made our fishing experience enjoyable even though 3 out of 6 became sea sick and we had to go in early. The grandkids had a good time and caught a couple good size fish a piece before they became ill. John handled the situation very well and did all he could to help the boys stay comfortable and engaged until we returned to dock where they were able to get a picture with a large Spanish Mackerel. Captain Bill also kept the mood light and entertaining. Thanks for a fun time despite the situation!

We had a blast with Captain Bill and John aboard the Starfire. Our party consisted of 2 adult men and 3 boys, ages 9, 9, and 7. This was a great trip to introduce our boys to the gulf. Our day started at the dock with Bill and John instantly making a connection with our boys. My boy was very nervous about being on the boat, but John and Bill did great to talk with him and get him more comfortable. We started out our trip trolling for spanish mackerel, going 4 for 5 with our first fish in the boat within the first 10 minutes. We then switched to bottom fishing, targeting vermillion snapper. John gave the boys a quick lesson on the proper technique and off we went. Captain Bill put us right on the fish, and the boys kept John busy with all the fish being pulled in the boat. Unfortunately, John was too good of a teacher because the kids let us know how much they out fished their dads. As soon as the bite stopped, Captain Bill didn't waste time and moved us to another spot, always having sucess at the new spot. We pulled in a wide variety of fish throughout the trip. We ended up bringing home over 50 filets, and caught just as many, if not more that went back in the water. The day ended with a board full of fish and smiles on all our faces. Great trip and a ton of memories made. I would definitely recommend Captain Bill and the Starfire if you're looking to book a fishing trip in Destin!

Captain Bill and First Mate John were fantastic! They took great care of our four kids (10, 8, 6, and 1) and made the trip enjoyable for everyone. We caught a ton of fish and had an unforgettable experience. Highly recommend!
